So, with harvest twenty-twenty-six now finally drawing to a close, I thought we'd round up a handful of our favourite winemakers from across the country. To gather for the sheer love of it. To get us all back to basics. To celebrate this delicious thing that binds us. That gives us all, so much bliss.

Each Wednesday, the kitchen team takes over ESSA for the night.
They write five dishes built around what’s coming through from the farm. They choose the direction.
They pick the music. They run the room. It’s a full takeover.
The menu is five shared plates, $68 per person. What you’re eating is what’s happening right now.
