At Essa, our menu is all about capturing ingredients at their peak and treating them with the utmost respect. At the heart of our kitchen is our wood fire hearth, which we use in everything from smoking ingredients to adding a hint of char to vegetables and even desserts. Owner and executive chef Phil Marchant and our team focus on those perfect seasonal moments, making sure every dish is a reflection of the farmers, hunters, and providores who help us bring it to life.
