Then a long lunch. Appellation oysters, raw scallop with pomelo and smoked chilli, Mooloolaba king prawns. Jamón ibérico de bellota, Moreton Bay bug with potato beignet, heirloom tomatoes with buffalo curd. Wood fired Murray cod to follow. Chocolate crémeux with blood plum and cognac cream to finish.

Four hours of premium beverage package running alongside it. Champagne, Chablis, a rosé worth drinking, Koerner Sangiovese.

Races on the big screens. Black and white dress code, and a prize for whoever wears it best.

The Nixon Room opens from 3:00 for anyone not ready to go home.
